Simply Scrumptious Spoon Bread

I tried making spoon bread for the first time last night. Mom and Dad were on a date, so Caleb and I ate half of it for supper. 🙂 It was even more delicious than cornbread, and super easy. (Provided that you have something with which to beat the egg whites…I’m sure back in Laura Ingalls’s day it wouldn’t have been so effortless!)

Spoon Bread
1 cup cornmeal
1 tsp. salt
3 cups milk
2 tablespoons butter
3 eggs, separated
2 teaspoons baking powder

Combine cornmeal and salt in pan. Stir in two cups milk. Cook over low heat till thick, stirring constantly. Remove from heat and stir in butter. Beat in remaining milk, well-beaten yolks, and baking powder. Beat egg whites until stiff peaks form and fold into mixture. Pour in greased 2 quart casserole. Bake at 350 degrees 40 minutes or until puffed and brown. Serve with honey or jam.
