Chocolate Cake with Ganache

I got this delicious recipe from some friends of ours, and made it for Mom’s birthday. It’s really yummy!

Chocolate Cake

2 cups sugar
3/4 cup butter, at room temperature
3 eggs
2 cups all-purpose flour
2 tsp. salt
2 tsp. baking powder
2 tsp. baking soda
2 tsp. vanilla
1 cup unsweetened cocoa
2 cups whipping cream, at room temperature

Preheat oven to 350 degrees. Grease and flour a bundt pan. In a large bowl combine sugar, butter, eggs, flour, salt, baking powder, baking soda, vanilla, cocoa, and cream; mix well. (Batter will be thick.) Pour mixture into prepared bundt pan. Bake for 45 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and let cool before frosting with chocolate ganache.

Chocolate Ganache

16 ounces semisweet chocolate chips
2 cups whipping cream

Melt chocolate with cream in a heavy saucepan and cook over very low heat until the mixture is smooth and glossy. Transfer the mixture to a bowl and refrigerate until cooled but not too firm, 30 to 45 minutes. Using a handheld mixer, beat on high speed until thick and creamy. Spread on cake immediately. (I used thick chocolate syrup to decorate the top, too.)
