Winter Trail Mix Cookies

Here’s a recipe for all healthful and nutritious bakers. They’re really fun to make, and don’t have any sugar, butter, or eggs!

2 medium bananas, mashed
1/2 cup molasses
1/4 cup honey
1 tablespoon cornstarch
1/2 cup applesauce
1/4 cup water
1 teaspoon vanilla
1 cup whole wheat flour (I used at least 1/2 cup extra)
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon cloves
1/2 cup raisins (but who would be crazy enough to put those in?)
1/2 cup semisweet chocolate chips (I doubled those too!)
1/2 half cup peanuts (optional, of course)
3 cups quick oats

Preheat oven to 350 degrees. Mix first seven ingredients. Stir in flour, baking soda, and spices. Add raisins, chocolate chips, peanuts, and oats. Dough will be very heavy. Form into fairly large balls, flatten and shape into round cookies. Bake for 8-12 minutes on lightly greased baking sheet.

They are really healthy, and taste good for being so healthy! Go ahead and try it! Happy baking!
